How flavor and nutrition got disconnected

Interesting book review in the WSJ: “The Doritos effect” by Mark Schatzker.

In essence, the author of the book claims that via modern food science the connection between “nutritional value” and “flavor” got severely twisted. That is why unhealthy food like chocolate or chips are so irresistible – the ingredients fool us into wanting more and more of stuff which is *not* good for us. Without having read the book, this sound TOTALLY correct.
